The story begins with amla, or Indian gooseberry (Phyllanthus emblica), a fruit deeply associated with the Indian subcontinent and cultivated across several parts of India. Its unmistakably tart, astringent character makes it particularly suited to chutneys, pickles and preserves.

Season

Amla is essentially a winter fruit, making this chutney particularly at home on the Indian winter table. Preserving the fruit as chutney is also a practical way of carrying its distinctive flavour beyond the fresh harvest season.
